Healthy Kale and Cabbage Slaw
6 - 8 servings
Ingredients
- 6 or so large kale leaves, removed from stems and sliced thinly
- 3 cups thinly shredded cabbage, green or napa works well
- 1/2 cup shredded carrots
- 1/4 cup dried cranberries or dried cherries
- 2 to 3 tablespoons toasted sunflower seeds
- 1/2 cup plain yogurt
- 2-3 tablespoons lemon juice
- 1 tablespoon honey
- Salt and freshly ground pepper to taste
Instructions
Soften the kale by rubbing lightly with your hands using a bit of olive oil
Combine all ingredients in a large mixing bowl and stir well.
Serve as a delicious part of any meal.
For a vinegarette style dressing use:
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 1/2 teaspoons honey
Cold Cucumber Soup
4-6 Servings
Ingredients
3 large cucumbers, peeled and coarsely chopped
1/2 cup chopped onion
1 clove garlic, minced
2 cups water
2 cups plain yogurt
3 tbsp. white wine vinegar
Salt 3/4 tsp or to taste
Pepper 1/8 tsp or to taste
Instructions
In a blender, combine all ingredients and puree until well mixed. Chill and serve. Garnish with chopped green onions or tomatoes.
Portobello Mushrooms with Spinach & Bleu Cheese
4 servings
Bake 18-20 minutes in 350-degree oven
Ingredients
4 large Portobello Mushrooms, stems removed
2 large cloves of Garlic, minced
Coconut Oil
Crumbled Bleu Cheese
20-25 leaves of Baby Spinach, stems removed
Instructions
Clean mushrooms with a lightly dampened paper towel. Do not rinse with water as they will become soggy.
Place mushrooms top side down on baking sheet, brush with melted coconut oil.
Sprinkle minced garlic in the underside of the mushroom.
Tear spinach leaves and arrange on the mushroom bottom (5-6 leaves per mushroom), covering garlic.
Sprinkle bleu cheese crumbles on top of spinach.
Bake in 350 degree oven for 18 – 20 minutes.
Seasoned Sweet Potato Fries
Serves: 2-3
Time: 40-45 minutes
Oven 350 F
Ingredients
2 Large Sweet Potatoes
Olive Oil
Cajun Seasoning
Instructions
Slice sweet potatoes into fries.
Place in bowl and drizzle with olive oil and stir to coat all fries.
Lay in single layer on baking sheet.
Sprinkle seasoning over fries.
Bake 30-40 minutes at 350 F.

Cajun Seasoning – Delish on Carrot or Sweet Potato Fries
Ingredients
2 tablespoons cayenne pepper
2 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons fine sea salt
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 tablespoon onion powder
Instructions
Mix all spices together.
Toss or drizzle sliced carrots or sweet potatoes with olive oil and sprinkle with seasoning blend.

Simple Sweet Potato and Leek Soup
Serves: 8+
Time: 10-15mins prep
Crockpot Cook Time: 6hrs on High or 8hrs on Low
Ingredients
6 medium sweet potatoes, cubed
2 large leeks, peeled and chopped
32ozs. Coconut milk
1 TBSP Dried Basil
1 TBSP Chili Powder
1 TBSP Ground Cummin
1 TBSP Ground Turmeric
Instructions
Place all ingredients in crockpot and stir. Cook at desired temp and time – 6 hours on High, or 8 hours on Low.
Blend cooked soup in blender, making sure to not fill blender jar too full. An immersion blender will also work.

Greek Seasoning Blend – Great for Roasted Veggies
Ingredients
¼ cup dried oregano
3 tablespoons dried thyme
2 tablespoons fine sea salt
1 ½ tablespoons dried basil
1 ½ tablespoons dried onion flakes
2 teaspoons dried minced garlic
Instructions
Mix all spices together.
Toss or drizzle veggies with olive oil and sprinkle with seasoning blend.
Notes
Great on veggies such as zucchini, bell peppers, brussel sprouts, red onion and eggplant.
